Fiesta-style local food is available at the new Kusinan Guahan restaurant. Located in Legacy Square in Mangilao in what was previously the Imperial Garden Restaurant the 2 000 square-foot facility wants to deliver traditional Chamorro cuisine for locals and visitors. Business partners and co-owners Anthony T. Flores and James M. Cruz told the Journal that the timeline of the family-operated business from the initial selection of the location to the grand opening date of Sept. 1 was approximately six months. "Our investment for Kusinan Guahan totaled around $100 000 including the lease insurance equipment and other fees " Flores said.

Kusinan Guahan is a buffet-style restaurant serving classic dishes such as kadon pika and shrimp with coconut milk and tomatoes. Currently there is not an ala carte menu but special requests are accepted. Cruz is also the head chef for Kusinan Guahan and he spoke about the importance of preparing hearty Chamorro food the traditional way. "My nephew and two brothers help me out here [at the restaurant] " he said. "The reason why we use family is we have the same taste and we want to maintain the consistency so our customers will keep coming back."

Flores told the Journal that they originally planned to open at the Chamorro Village in HagÅtña. Instead the present location was selected so patrons could enjoy fiesta food in the comfort of air conditioning with a relaxed ambiance. Kusinan Guahan is open Monday through Friday for lunch from 11 a.m. until 2 p.m. and open for dinner from 5 p.m. until 9 p.m. Weekend hours of operations are Saturday from 11 a.m. until 2 p.m. and for Sunday brunch from 9 a.m. until 2 p.m. Lunch and the weekend buffet is $10 and the weeknight dinner buffet is $12.

Flores and Cruz said that they have plans to open other businesses but did not confirm any specific locations or concepts. Flores has 20 years of experience in businesses involving commercial real estate and being a part of family-operated endeavors. Cruz was employed with the Guam Telephone Authority for 21 years and credits his culinary experience to his family and catering for a myriad of fiestas and other events. MBJ
